My mother-in-law’s Cheesy Hash Browns Casserole is one of my favorite things in this world! She makes it for me every birthday, for Christmas, Thanksgiving… or whenever I hint at her that I reeeeeeally want it.
One of the best things about this dish, besides how yummy it is, is the fact you can pre-make it, store it in the freezer, and bake it as needed. Such an easy and nutritional side to meal-prep with!
The base ingredients to Cheesy Hash Browns
Try not to drool:
- Hash browns (I usually prefer cubbed but my store was out, so today we are using the shredded ones).
- Cheddar Cheese
- Sour Cream
- Onions
- Ritz Crackers
- Cream of Chicken Soup
- Butter
- Salt & Pepper
Your toddler will love to help you mix and stir!
This is one of the reasons I love this dish so much – it’s easy and safe for my almost 3-year-old to help me with… and she loves it!
I prepare all ingredients before, so all we have to do then is stir, stir, stir! Aka… a toddler’s favorite activity!
And one of the best parts: you can prepare it beforehand and store it in the freezer! When you are ready, simply thaw, add the crackers on top, and bake as needed. Easiest meal-prep ever!
The optional additions to make your Cheesy Hash Browns Casserole even more delicious:
I confess I only made this by myself a handful of times – only because when I need it, Karen (my amazing mother-in-law) is happy to make it for me!
But, the times I did, and being the rebel I am, I would always include a few other things to make it THAT MUCH EXTRA!
Some of the things I’ve added to the mix are:
- Bacon Bits (soft kind)
- Chopped Ham
- Green Onions
- Parmesan
- Seasoned Shredded Chicken
And I assure you… it was even more delicious (if that is even possible)!
Materials you will need:
- Glass baking dish – this one is my absolute favorite!
- Measuring cups and spoons

Cheesy Hash Browns Casserole
Ingredients
- 1 lb frozen hash browns (cubbed or shredded)
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 cup finely chopped onions
- 1 cup sour cream
- 2/4 cup butter (melted)
- 1 can cream of chicken soup
- 1 1/2 cups shredded cheddar cheese
- 2 cups crushed crackers (Ritz is my personal favorite for this dish!)
- 1/4 cup butter (melted, to mix with crushed crackers)
Instructions
- Pre-heat oven to 375 degrees (Fahrenheit).
- Crush the crackers and combine with 1/4 of melted butter.
- Stir all ingredients into a large bowl until fully combined.
- Transfer to baking dish, and add the crushed crackers on top.
- Bake it at 375 for 45-60 minutes, or until the very middle is hot.
