Cheesy Hash Browns Casserole
This amazing side dish is so easy, even toddlers can do it!... Well, pretty much! Pair it with a veggie of your choice and some rotisseire chicken, and you've got an amazing dinner ready for any occasion - specialor not!

- 1 lb frozen hash browns (cubbed or shredded)
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 cup finely chopped onions
- 1 cup sour cream
- 2/4 cup butter (melted)
- 1 can cream of chicken soup
- 1 1/2 cups shredded cheddar cheese
- 2 cups crushed crackers (Ritz is my personal favorite for this dish!)
- 1/4 cup butter (melted, to mix with crushed crackers)
Pre-heat oven to 375 degrees (Fahrenheit).
Crush the crackers and combine with 1/4 of melted butter.
Stir all ingredients into a large bowl until fully combined.
Transfer to baking dish, and add the crushed crackers on top.
Bake it at 375 for 45-60 minutes, or until the very middle is hot.
